One of the best tastes in summer is stuffed peppers.you can cook with meat or without meat.Both of them are delicious.You can prepare as a main dish for dinner or you can cook as a side dish.Today I will share my recipe for without ground meat stuffed pepper.


Stuffed Pepper without ground meat is not necesarry to heat when eat.You can serve it cook.So ıts very nice option at your parties and invitations.

How to make stuffed pepper?

Onions and oil are very important for good flavor so you should not reduce amount of them when making.Also ıt is used cinnamon for classic version but I dont use in my recipe.If you can not find pine nuts ,your stuffed pepper will perfect still.

Turkish Stuffed Zucchini


Stuffed Pepper Recipe


Prep Time:15 minutes

Cook Time:45 minutes

Serve 6 to 8


Ingredients

12 bell peppers

1 tablespoon medium grain rice for each pepper(12 tablespoon rice)

3 medium size onions,chopped

2 medium size carrots,grated

2 tablespoon currants

2 tablespoon pine nuts

1 teaspoon dry mint or few leaves mint,finely diced

1 teaspoon ground black pepper

1 tablespoon ground red pepper

1 /4 bunch of dill,finely diced

1 juice of lemon

1/2 cups olive oil

2 tomatoes for cover

salt

For filling;

Fry onions in olive oil until become golden.

Add pine nuts and cook 1 minutes.

Add grated carrots and continue to cook together 5 minutes.

Add washed rice ,1/2 cup water,the other remain ingredients and mix.Stop to cook.Add lemon juice to mixture and mix.Close lid of pot and let them wait 5 minutes.


Stuff and cook process;

Stuf the peppers with mixture.Should not stuff too much because when the mixture cook will get bigger.Cover the peppers by cutting tomato.Place stuffed peppers upright in a pot.Pour water to pot.When pour the water use deep side of the pot not over the peppers.Water should reaches the middle of peppers.Close the lid of the pot and cook in a medium heat aproximately 45 minutes.Check ocasionally for water of the peppers.If water to low you can add little water while cooking.
